About California King Salmon

KING OF THE PACIFIC

Chinook salmon are the largest and highly sought after of the five species of Pacific Salmon. California has historically been the leading producer of these salmon, hence the name California King Salmon.

 

With a lean, firm, yet moist texture, and a diverse, hardy, delicate flavor profile, California King Salmon are versatile and a delight in both the kitchen and at the dinner table.

 

The California King Salmon season is short though, generally only about five months through the summer, so don’t hesitate and get them while they’re available! (You can always freeze or smoke them for your fall and winter meals.)
